1 1/4 pound choice ground chuck
1 clove garlic, minced (about 1/2 teaspoon)
1/2 small onion, minced (about 2 tablespoons)
1 tablespoon cream
2 dashes Tabasco
1/2 teaspoon salt
Freshly ground black pepper
Combine all ingredients and mix very gently. With minimal handling, shape the beef into four patties. Grill over medium-hot coals, turning once, for a total of 9 to 10 minutes for a burger that’s pink inside. Cooking time varies depending on distance from the coals, temperature of the coals, and the temperature and thickness of the meat. Serve on a toasted bun with homemade salsa. Serves 4.
