Roasted Red Pepper Dip

     2 red peppers, roasted and seeded

     1 clove garlic, minced

     2 tablespoons olive oil

     1 lemon zested with juice

     2 ounces cream cheese, softened

     20 ounces sour cream

     2 tablespoons sun dried tomatoes, chopped

     Salt and pepper to taste

     


     Puree peppers with garlic, oil and lemon juice. Stir in softened cream cheese. Fold mixture into sour cream. Add sun dried tomatoes. Season with salt and pepper.
