Beef in a Pita Pocket

     1 pound lean ground beef

     1/2 cup chopped onion

     1/2 cup chopped green pepper

     1 large tomato, peeled and chopped

     1 ear corn or 1 cup frozen corn

     2 teaspoons sweet paprika

     1/4 teaspoon kosher salt, or more to taste

     1/4 teaspoon thyme

     1/4 teaspoon freshly ground black pepper

     1/4 cup mayonnaise

     4 whole-wheat pita breads

     Shredded lettuce and chopped tomatoes, for garnish

     


     Preheat oven to 350 degrees.

     In large, nonstick skillet, cook and stir ground beef with onion and green pepper until beef is no longer pink and vegetables have softened.

     Add tomato and corn. Stir in paprika, salt, thyme and pepper. Simmer 6 to 7 minutes.

     Stir in mayonnaise and heat through.

     Heat pita breads in preheated oven 5 minutes, or until just warm. Cut in half and fill with meat mixture. Top with shredded lettuce and chopped tomatoes, if desired. Serve immediately.

     Serves four.

     Nutritional analysis per serving: 550 calories, 28.5 g protein, 46 g carbohydrate, 7 g fiber, 29.5 g fat, 81 mg cholesterol, 634 mg sodium.
