Breakfast Burritos

     

     55 MINUTES

     

     20 minutes to make

     35 minutes to bake

     8 (9-inch) flour tortillas

     Filling:

     3 cups scrambled eggs

     1 cup diced ham

     1/2 cup crumbled bacon

     2 cups grated cheese blend

     1 cup cottage cheese

     2 dashes Tabasco sauce (optional, if you like it spicy!)

     

     Topping:

     1 1/2 cups sour cream

     1 cup mild green chilies

     Sprinkle on top:

     1 cup grated cheese blend

     1/2 cup diced green onions


     Spray 9-by-13-inch baking dish with nonstick spray.

     In mixing bowl, combine filling ingredients. Fill each tortilla with a rounded 1/2 cup of filling and roll up. Place tortilla seam-side up in baking dish.

     Mix sour cream and green chilies and spread over tortilla rolls. Sprinkle with remaining cup of cheese and green onions. Cover, label and freeze.

     Thaw when ready to cook.

     Bake, covered with foil, in 350 degrees oven for 20 minutes and then uncovered for 15 more minutes, until internal temperature reaches 165 degrees. Serves 6.
