1/3 cup coarsely chopped fresh flat-leaf parsley
1 tablespoon unsalted butter, softened
1/4 teaspoon salt
2 slices of a large, sweet onion such as a red or Vidalia onion
2 slices whole-wheat bread
1/3 pound thinly sliced cooked ham
Finely chop parsley in a food processor, then add butter and salt and blend to a paste. Cut 2 ( 1/8 -inch-thick) slices crosswise from center of onion. Spread a portion of parsley butter on 1 side of each slice of bread. Arrange 1 onion slice on each of 2 bread slices and spread each with the remaining parsley butter, then top each piece of bread with the ham. Enjoy.
Makes 1 sandwich.
