Curtise Garner
1/2 cup soy sauce
1/4 cup vegetable oil
1 1/2 teaspoons cooking sherry
2 tablespoons brown sugar
1 1/2 cloves garlic, crushed
3 tablespoons olive oil
2 boneless, skinless chicken breast halves
In a medium bowl, mix soy sauce, vegetable oil, sherry, brown sugar and garlic. Pour into a large resealable bag. Place chicken in the bag and shake to coat. Marinate in the refrigerator at least 4 hours. After marinade process is complete, heat olive oil in a skillet over medium-high heat. Place chicken breasts in skillet. Sear one side of chicken approximately 6 minutes or until well browned. Turn chicken over and cook 6 minutes or until desired doneness. Serves 2. Per serving: 521 calories; 34 g fat (5 g saturated fat; 59 percent calories from fat); 5 g carbohydrates; 120 mg cholesterol; 1,489 mg sodium; 45 g protein; 0.2 g fiber.
