Adapted from “Bake the Best-Ever Cookies! Quick Starts for Kids!” by Sarah A. Williamson (Williamson Publishing, 2001).
2/3 cup softened butter or margarine 2/3 cup packed dark brown sugar
2/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup mashed ripe bananas (2-3 bananas)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 package (6 ounces) semisweet chocolate chips
Heat oven to 350 degrees. In a large bowl, cream the butter, brown sugar and granulated sugar together using an electric mixer. Add the egg and vanilla; beat well. Stir in the bananas. In a separate bowl, sift together the flour, baking powder and salt. Carefully add the sifted ingredients to the creamed mixture, blending as you go. Finally, add the chocolate chips and stir together. Pat the dough into a greased 9-by-13-inch pan and bake for 30 to 35 minutes. Cool on a wire rack before cutting into bars.
