Recipe adapted from Marlene Uhlianuk, who uses her prized Black Pearl cherry tomatoes in this flavorful salad, but you can substitute sweet cherry, grape or yellow pear tomatoes and it will be just as delicious. Serve with fresh cubed feta cheese on the side and slices of crusty bread.
1 pound cherry, grape or yellow tomatoes (3 cups), halved 3 tablespoons chopped fresh chives 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh basil 2 cloves minced garlic 1/3 cup extra-virgin olive oil 1/2 teaspoon salt 1/4 teaspoon black pepper
Combine first 6 ingredients in medium bowl. Season with salt and pepper to taste. Let stand, covered, at room temperature 15 minutes to allow flavors to develop. Serves 6.
