Bottom layer: 1 package yellow cake mix (set aside 1 cup) 1/2 cup margarine, melted 1 egg Filling: 1 can (30 ounces) pumpkin pie mix 2 eggs 2/3 cup milk Topping: 1 cup reserved cake mix 1/4 cup sugar 1 teaspoon cinnamon 1/4 cup margarine
Preheat oven to 350 degrees. Grease bottom of a 13 x 9-inch baking pan. Reserve 1 cup cake mix for topping. Combine the remainder of cake mix, margarine and egg until well mixed. Press into bottom of prepared pan. Prepare filling by combining pumpkin pie mix, 2 eggs and milk; mix until smooth. Pour over crust.
For topping, combine reserved cake mix, sugar, cinnamon and margarine. Sprinkle topping over filling. Bake 45 to 50 minutes or until knife comes out clean. Serve with whipped topping or ice cream, if desired.
Yields 16 servings.
