Dirt Bites

Adapted from “Silly Snacks” (Publications International, Ltd., 2004)

4 1/2 cups party mix (such as Chex mix)

1 tablespoon butter

1/2 cup semisweet chocolate morsels

1/4 cup peanut butter or soynut butter

1/2 teaspoon vanilla extract

3/4 cup powdered sugar

Measure party mix or cereal in large bowl; set aside. Place butter, chocolate and peanut butter or soynut butter in microwave-safe bowl. Microwave for 1 to 1 1/2 minutes (stirring after 1 minute), until chocolate is melted. (OR melt in saucepan over low heat). Remove from heat; stir in vanilla. Pour warm mixture over party mix and stir with large spoon until well coated. Pour powdered sugar in a zip-top bag; add coated party mix and toss to coat all. Spread double-coated mixture onto sheet of wax paper to cool. Pick up cooled mixture with hands and store in clean zip-top bag. Refrigerate leftovers.

Yields 10 servings.

Per serving: 214 calories; 9.5 g fat (6 g saturated fat; 40 percent calories from fat); 30 g carbohydrate; 3 mg cholesterol; 277 mg sodium; 4 g protein; 2 g fiber.
