Adapted from Pampered Chef “Let’s Eat” kids’ cookbook.
2 tablespoons butter or margarine 3 eggs 1/2 cup milk 1/2 cup all-purpose flour 1/2 teaspoon salt 1/4 teaspoon vanilla Powdered sugar Maple syrup
Preheat oven to 425 degrees. Place the butter in a large bowl and microwave on high 30 to 45 seconds or until melted. Add the eggs, milk, flour, salt and vanilla to the butter. Whisk until smooth. Lightly spray the bottom of a pie or cake pan with nonstick spray. Pour the egg mixture into the pan. Bake 25 minutes or until puffed and brown. Carefully remove from the oven. Sprinkle or sift powdered sugar over the top. Cut into 4 triangles. Serve with syrup. Yields 4 servings.
Per serving: 250 calories; 11 g fat (6 g saturated fat; 40 percent calories from fat); 30 g carbohydrate; 180 mg cholesterol; 417 mg sodium; 7 g protein; 0.4 g fiber.
