Adapted from “Apple Cookbook” by Olwen Woodier (Storey Books, $9.95). This makes a moist, dense dessert.
1/2 cup butter, softened 1 cup sugar 1 egg, beaten 1 teaspoon vanilla 1 cup flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon cinnamon 1/4 teaspoon ground 1 large apple, peeled, cored and chopped 1/2 cup chopped walnuts

Cream butter and sugar, and beat in egg and vanilla. Sift dry ingredients and work into the first mixture. Mix in apples and walnuts; batter will be stiff. Spread into a buttered 8-by-8-inch baking dish and bake at 350 degrees 35-45 minutes.
Serves 12.
