Apple brownies

Adapted from “Apple Cookbook” by Olwen Woodier (Storey Books, $9.95). This makes a moist, dense dessert.

1/2 cup butter, softened

1 cup sugar

1 egg, beaten

1 teaspoon vanilla
extract

1 cup flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon ground
nutmeg

1 large apple, peeled, cored and chopped

1/2 cup chopped walnuts

Cream butter and sugar, and beat in egg and vanilla. Sift dry ingredients and work into the first mixture. Mix in apples and walnuts; batter will be stiff. Spread into a buttered 8-by-8-inch baking dish and bake at 350 degrees 35-45 minutes.

Serves 12.

Per serving: 227 calories; 12 g fat (6 g saturated fat; 48 percent calories from fat); 29 g carbohydrates; 40 mg cholesterol; 158 mg sodium; 2 g protein; 1 g fiber.
