Slow-Cooked Yellow Squash

(Serves 4)

PREP TIME: 15 minutes.

TOTAL TIME: 50 minutes.


2 tablespoons olive oil

1 medium onion, halved and thinly sliced

4 yellow squash (8 ounces each), thinly sliced

Coarse salt and ground pepper

In a large pot, heat oil over medium-low. Add onion, squash and 2 tablespoons water. Season with salt and pepper and toss well. Cover and cook, stirring occasionally, until soft, 30 minutes to 35 minutes.

Per serving: 105 calories; 7 g fat (1 g saturated fat; 60 percent calories from fat); 10 g carbohydrates; 0 mg cholesterol; 94 mg sodium; 3 g protein; 3 g fiber.
