2 pounds sweet potatoes, cooked, skinned, mashed
1/3 cup milk
1/4 cup packed brown sugar
1/4 cup butter, melted
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
Pinch nutmeg
Pinch cinnamon
Topping:
1/3 cup packed brown sugar
1/3 cup pecans
Preheat oven to 350 degrees. In a mixing bowl, beat cooked sweet potatoes, milk, brown sugar, butter, egg, vanilla, salt, nutmeg and cinnamon until fluffy. Transfer mixture into a 1 1/2 quart baking dish.
To make topping: combine brown sugar and pecans in small bowl. Sprinkle topping over sweet potato mixture.
Bake, uncovered, for 30 to 35 minutes or until golden brown.
Yields 8 servings.
