1 cup all-purpose flour
1 teaspoon salt
3 eggs
1 cup milk
1/2 cup pan drippings from the roast prime rib of beef
Preheat the oven to 450 degrees.
Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and frothy. Stir the dry ingredients into the wet and beat until just combined. Allow the batter to sit for about 30 minutes so the batter can relax.
Divide the pan drippings into four wells of a muffin tin. Put the muffin pan in the oven for about 20 minutes and get the drippings hot. Carefully take the pan out of the oven and pour the batter equally into the four wells. Put the pan back in the oven and cook until puffed and dry, 15 to 20 minutes.
Serves 4.
