1 stick butter, slightly softened
1 1/2 cups creamy peanut butter
1 cup packed brown sugar
1/2 cup white sugar
3 eggs
1 tablespoon vanilla
1 teaspoon light corn syrup
2 teaspoons baking soda
4 1/2 cups old-fashioned oats
1 cup blue and yellow M&M’s
Preheat oven to 350 degrees. Beat butter, peanut butter, brown sugar and white sugar in a large bowl with an electric mixer. Add the eggs, vanilla and corn syrup; beat well. Stir in baking soda and oats.
With wet hands, roll the dough into 1-inch balls and place cookies 2 inches apart on nonstick baking sheet, coated with nonstick spray. Press 2 yellow and 2 blue M&M’s on each cookie. Bake for about 11 minutes. Do not overbake. Remove from baking sheet and place on clean kitchen towel until the cookies are cool and firmed up. Transport and/or store in airtight zipper-type plastic bag.
Makes about 3 dozen cookies.
