4-6 tablespoons of extra virgin olive oil
3 garlic cloves finely chopped (more if you love garlic)
1/4 cup of sun-dried tomatoes finely chopped soaked in water, wine or olive oil overnight
1/4 cup chopped basil
Sea salt and pepper to taste
2 pounds ground beef
Some aged Italian cheeses crumbled (I love Pecorino Toscano)
Sliced tomatoes
Sliced onions

Heat the olive oil in a pan and add the garlic. Keep it moving; the smaller it is, the easier it burns. Only cook it 30 seconds or so, and then add some cold water to stop it from cooking. Reduce the heat and add the sun dried tomatoes; cook for 3 to 5 minutes. Add the basil during the last minute of cooking. Add sea salt and pepper.
Combine with the ground meat and form into 6 patties. These are great on the grill; cook until done the way you like them. Sprinkle the cheese on top during the last minute of cooking until melted. Serve on buns with sliced tomatoes, onions or your favorite garnishes. Serves 6.
