1 cup mashed potatoes
2 tablespoons butter
2 eggs
1 cup sugar
1 cup milk
4 cups flour
5 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
Oil for frying
Powdered sugar for dusting
Combine mashed potatoes, butter, eggs, sugar and milk in a mixer; mix well. Add flour, baking powder, salt and nutmeg; mix until blended.
Prepare an area to roll out the dough by dusting a flat surface with flour. Take a large bowl of dough and dust it with flour. Set ball of dough on prepared surface and roll out with a rolling pin. Use a round cookie cutter with a hole in middle and cut out donuts.
Heat enough oil in a pan or fryer so that the dough floats and doesn’t touch the bottom of the pan. Fry until brown on one side; flip to brown the other side (doesn’t take long). Remove carefully from pan and let cool on layers of paper towel. Pour powdered sugar in a bowl and dip donuts in the sugar.
Yields 28 donuts.
