In a Dutch oven, heat 1 tablespoon olive oil and saute 3 medium chopped carrots, 2 chopped celery ribs and 3/4 cup chopped sweet onion until tender. Stir in 2 quarts chicken broth, 3 cups cooked chicken breast and 1/4 teaspoon dried thyme. Bring to boil. Stir in 1 1/2 cups uncooked alphabet pasta, reduce heat and simmer uncovered for 10 minutes or until tender. Stir in 3 tablespoons chopped parsley. Serves 8.
