Sesame Pork Tenderloin

Look for sesame oil and fish sauce, also called nam pla, in the Asian aisle of most supermarkets. You can also grill the pork over medium hot coals to an internal temperature of 140-145 degrees.

1/4 cup fresh-squeezed orange juice

1/2 cup soy sauce

1 tablespoon Asian sesame oil

1 teaspoon fish sauce (nam pla)

1 tablespoon minced fresh garlic

3 garlic cloves, minced

2 boneless pork tenderloins, trimmed of fat

2 tablespoons olive oil

In a large bowl stir together marinade ingredients and let stand 15 minutes.

Add pork to marinade, tossing to coat completely. Marinate pork, covered and chilled, at least 2 hours, or overnight, turning pork at least once. Heat oven to 375 degrees. Remove pork from marinade and pat dry. Heat large, ovenproof skillet over medium-high heat on cook top and add oil. Heat until hot, not smoking. Add pork and sear on all sides. Immediately put in hot oven and roast for 15-20 minutes or until it reaches an internal temperature of 140-145 degrees. Remove from oven, let sit 10 minutes for juices to settle. Slice on the diagonal and serve.
